Cream together:
1/2 c sugar
1/2 c brown sugar
1/2 c vegan margarine
1/2 c oil (I used peanut)
Add:
2 1/2 T soy yogurt (plain, unsweetened)
1/2 t vanilla
1/2 t almond extract
1/2 t cream of tartar
1/2 t baking soda
1/4 t salt
1 c crushed potato chips
Gently stir in:
2 c all purpose flour
(Add more flour if it seems too wet. I added about 2 T more.)
1 c vegan chocolate chips
Scoop balls of dough, and place on ungreased cookie sheets. Bake at 350F for 12-15 minutes.

How potato-chippy are they? I don't know why, but I expected them to have big chunks of potato chip showing through.
I suppose you could make them with big pieces of chips, but I crushed mine fine. They are deceptive. There is a texture (in a good way) that's hard to identify. Tim first guessed coconut. Once you know what it is, you can tell. The salt/chocolate combo is great. I took some of these to work, and they were gone quickly, with demands for the recipe.
oooh, these sound fantastical! i've always wanted to bake with potato chips, i have yet to though. i'm gonna deglutenize your cookies and make them happen. this has me thinking as to what potato chips i love the most that would taste the best. so awesome!

OOOh. sweet and salty. I've made pretzel chocolate chip cookies but not potato cip cookies. OH boy oh boy. Do these go with dip? Thank you for posting.
Love the idea of adding chips to potato chip cookies! When I made something similar a few years ago, I ended up drizzling them with chocolate. Chips would be way better!
